Ingredients

  • 1 cup orzo pasta
  • 8 cups chicken broth

  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion, carrots, and celery, and sauté until softened.
  2. Stir in the garlic and cook for another minute.
  3. Season the chicken breasts with salt and pepper and add them to the pot. Pour in the chicken broth and bring to a boil.
  4. Reduce the heat and let it simmer until the chicken is cooked through, about 15-20 minutes.
  5. Remove the chicken, shred it, and return it to the pot.
  6. Add the orzo and cook for about 8-10 minutes until tender.
  7. Stir in the lemon juice and adjust seasoning with salt and pepper.
