- 2 tablespoons butter
- 1 tablespoon olive oil
- 3 garlic cloves, minced
- 1 small shallot, finely chopped (or ¼ cup red onion)
- 1 cup heavy cream
- ½ cup chicken broth (or vegetable broth for vegetarian option)
- ½ cup grated Parmesan cheese
- 1 tablespoon Cajun seasoning
- ½ teaspoon smoked paprika
- ¼ teaspoon cayenne pepper (optional)
- Salt and black pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- In a medium skillet, melt butter with olive oil over medium heat.
- Add garlic and shallot; sauté until soft and fragrant (about 2-3 minutes).
- Stir in heavy cream and broth, then simmer for 3-4 minutes to reduce slightly.
- Add Cajun seasoning, paprika, cayenne, salt, and pepper. Simmer for another 3 minutes.
- Lower the heat and stir in Parmesan cheese until it’s melted and smooth.
- Taste and adjust seasoning as needed. Garnish with parsley if desired.
Notes
For a vegetarian version, use vegetable broth instead of chicken broth. Adjust the level of spiciness by modifying the cayenne and Cajun seasoning.
