Description

Ingredients

Egg Muffins with Kale and Turkey (12 muffins)

– 10 eggs

– 1 cup cooked turkey breast, diced

– 2 cups kale, finely chopped

– 1 small onion, minced

– ½ cup shredded cheese (optional)

– 2 tbsp olive oil

– Salt and pepper

Peanut Butter Overnight Oats with Cinnamon (4 jars)

– 2 cups rolled oats

– 2 cups milk or almond milk

– 1 cup Greek yogurt

– 4 tbsp natural peanut butter

– 2 tbsp chia seeds

– 2 tbsp maple syrup or honey (optional)

– 1 tsp cinnamon

– Pinch of salt

– Banana slices (for serving)

Sweet Potato and Black Bean Wraps (6 wraps)

– 6 whole-grain tortillas (8 in / 20 cm)

– 3 cups roasted sweet potato cubes

– 2 cups black beans, rinsed

– 1 cup corn kernels

– 1 cup peppers, diced

– ½ cup onion, minced

– 1 tsp ground cumin

– 1 tsp smoked paprika

– Salt and pepper

Mini Vegetable Frittatas (8 minis)

– 8 eggs

– 1 cup mixed vegetables, finely chopped (spinach, peppers, mushrooms)

– ¼ cup milk

– ½ cup feta or shredded cheese (optional)

– Salt and pepper

Whole-Grain Breakfast Cookies with Oats and Almond Pieces (12 cookies)

– 2 cups rolled oats

– ¾ cup whole-wheat flour

– ½ cup almond pieces

– ½ cup mashed ripe banana

– ¼ cup peanut or almond butter

– ¼ cup maple syrup or honey

– 2 eggs

– 1 tsp vanilla

– 1 tsp cinnamon

– 1 tsp baking powder

– Pinch of salt


Instructions

1. Egg Muffins (12): Preheat oven to 180°C / 350°F. Grease a 12-cup muffin tin. Sauté onion and kale in olive oil for 3 minutes. Whisk eggs with salt and pepper. Fold in turkey and cheese (if using). Divide into cups and bake 16–18 minutes until set. Cool before storing.

2. Overnight Oats (4 jars): In a bowl, whisk milk, yogurt, peanut butter, cinnamon, sweetener (optional), and salt. Stir in oats and chia. Divide into 4 jars. Chill overnight. Top with banana slices before serving.

3. Sweet Potato Black Bean Wraps (6): If sweet potatoes aren’t cooked, toss with cumin, paprika, salt, pepper and roast ~20 minutes at 200°C / 400°F. Warm beans, corn, peppers, onion, and potatoes in a pan. Fill tortillas, roll tightly, and wrap in foil or parchment.

4. Mini Frittatas (8): Preheat oven to 180°C / 350°F. Whisk eggs with milk, salt, and pepper. Stir in vegetables and cheese (if using). Pour into greased mini-muffin tray or silicone molds. Bake 14–16 minutes until set.

5. Breakfast Cookies (12): Preheat oven to 175°C / 350°F. Mix wet ingredients with banana. Fold in dry ingredients and almonds. Scoop 12 cookies onto a lined tray and flatten slightly. Bake 12–14 minutes until lightly golden. Cool on a rack.

Notes

Storage & reheating:

– Egg muffins: fridge 3–4 days; freeze up to 2 months. Reheat 30–45 sec microwave.

– Overnight oats: fridge up to 4 days. Eat cold or warm 30–40 sec.

– Wraps: fridge 4 days; freeze up to 2 months. Reheat 60–90 sec or crisp in a skillet ~2 min/side.

– Mini frittatas: fridge 3–4 days; freeze 1–2 months. Reheat 20–30 sec per mini.

– Cookies: airtight 4–5 days; freeze up to 2 months. Reheat 10–15 sec to soften.

 

Variations:

– Egg muffins: swap turkey for smoked salmon or chicken; add peppers/zucchini; use egg whites for lighter.

– Oats: use almond/sunflower butter; add berries; add protein powder + a splash more milk.

– Wraps: add scrambled eggs or shredded chicken; serve with salsa or Greek yogurt; use low-carb tortillas if desired.

– Frittatas: add pesto, herbs, or diced ham; omit cheese or use lactose-free.

– Cookies: add raisins or dark chocolate chips; use seed butter for nut-free; add 1 scoop protein powder + a bit more milk.

 

Protein boost (to reach ~25–30 g):

Add Greek yogurt/cottage cheese, extra turkey/beans, or ½ scoop protein powder depending on the recipe.
