Description

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter (plus more for cooking)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, whisk the milk, egg, melted butter, and vanilla (if using) until smooth.
  3. Pour the wet mixture into the dry ingredients. Gently stir until just combined; do not overmix.
  4. Heat a nonstick skillet over medium heat and lightly grease with butter. Pour about 1/4 cup of batter for each pancake.
  5. Cook until bubbles form on the surface and edges look set, about 2 minutes. Flip and cook another 1-2 minutes until golden brown.
  6. Stack and serve warm with butter, maple syrup, or your favorite toppings.

Notes

Use fresh baking powder for the fluffiest pancakes. Don’t overmix the batter; a few lumps help create tender pancakes.
