- 1 package tortellini (cheese or spinach and cheese)
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) diced tomatoes
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add the diced onion and sautรฉ until translucent, about 5 minutes. Stir in the garlic and cook for an additional minute.
- Add the diced tomatoes (with their juices) and broth to the pot. Bring to a simmer.
- Stir in the tortellini and cook until tender, about 3-5 minutes.
- Reduce the heat and stir in the heavy cream and Parmesan cheese until melted and combined. Season with salt and pepper to taste.
- Serve hot, garnished with fresh basil.
Notes
Use fresh grated Parmesan for best melt and flavor. Adjust seasoning after adding cheese.
