Ingredients

- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons melted butter
- 1 cup peeled and diced apples
- Additional butter or oil for cooking
Instructions
- Whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt in a large bowl.
- Mix buttermilk, egg, and melted butter in another bowl until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined; fold in the diced apples.
- Heat a skillet over medium heat and melt a little butter or oil.
- Pour 1/4 cup of pancake batter onto the skillet for each pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
- Serve warm with syrup, if desired.
