Description

Easy-to-make, protein-packed cottage cheese egg bites perfect for breakfast, snacks, or lunch.


Ingredients

  • 8 large eggs
  • 1 cup cottage cheese (0% – 2% fat recommended)
  • ½ cup shredded cheese (cheddar or feta)
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • Optional mix-ins: chopped fresh spinach, diced bell peppers, broccoli florets, cooked sausage, or diced ham (up to 1 cup total)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a blender, combine eggs, cottage cheese, shredded cheese, salt, black pepper, garlic powder, and onion powder. Blend until smooth.
  3. Pour the mixture evenly into a greased or silicone muffin pan.
  4. Add optional mix-ins evenly among the cups if desired.
  5. Bake for 20 minutes or until the egg bites are set and lightly golden on top.
  6. Let cool slightly before removing from the pan and serving.

Notes

These egg bites can be served warm or at room temperature. Store in an airtight container in the refrigerator for up to four days or freeze for up to three months.
