Description

A delightful tropical bread combining the flavors of pineapple and coconut, perfect for breakfast or snacks.


Ingredients

  • 1 cup crushed pineapple, drained
  • 1 cup shredded coconut
  • 1/2 cup sugar
  • 1/4 cup butter, softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs and vanilla, mixing well.
  4. Stir in the crushed pineapple and shredded coconut.
  5. In another bowl, combine the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  9. Let cool before slicing. Serve with coffee or tea.
