- 1 cup crushed pineapple, drained
- 1 cup shredded coconut
- 1/2 cup sugar
- 1/4 cup butter, softened
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a mixing bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs and vanilla, mixing well.
- Stir in the crushed pineapple and shredded coconut.
- In another bowl, combine the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Let cool before slicing. Serve with coffee or tea.
Notes
Serve warm or at room temperature with coffee or tea. Can be stored wrapped for up to 3 days at room temperature or 7 days in the refrigerator.
