- 2 to 3 ½ cups (9 to 16 ounces) raw, unsalted pistachios
- Salt, to taste (optional)
Instructions
- Preheat oven to 350°F (175°C).
- Spread pistachios in a single layer on a baking tray.
- Toast in the oven for several minutes, rotating halfway through until fragrant and lightly browned.
- Remove and let pistachios cool to warm temperature.
- Add pistachios and optional salt to a food processor.
- Pulse to break down the nuts, then blend steadily until smooth and creamy.
- Taste and adjust salt if needed, blending again briefly.
- Scoop into a clean glass container with a tight lid.
- Store in refrigerator for several weeks or at room temperature for a few days.
Notes
Use a strong food processor and be patient natural pistachio oils will create a creamy texture without added oils.
