Ingredients
8 oz lo mein noodles or spaghetti
1 lb boneless skinless chicken breast, cut into thin strips
2 tbsp olive or vegetable oil, divided
2–3 cloves garlic, minced
1 cup shredded carrots
1 cup snow peas or snap peas
1 red bell pepper, thinly sliced (optional)
2–3 green onions, sliced
**Sauce:**
3 tbsp low sodium soy sauce
3 tbsp hoisin or oyster sauce
1 tsp sesame oil
1–2 tsp brown sugar (to taste)
Instructions
1. Cook noodles in boiling water until just al dente. Drain and set aside.
2. Whisk together soy sauce, hoisin/oyster sauce, sesame oil, and brown sugar in a small bowl.
3. Heat 1 tbsp oil in a large skillet or wok over medium-high heat. Add chicken, season lightly with salt and pepper, and cook until browned and just cooked through. Remove to a plate.
4. Add remaining oil to the pan. Stir-fry garlic briefly, then add carrots, peas, and bell pepper. Sauté until crisp-tender.
5. Add cooked noodles, chicken, and sauce to the pan. Toss everything together over medium-high heat until heated through and coated evenly.
6. Stir in green onions, taste, and adjust seasoning. Serve hot.

• Do not overcook the noodles keep them slightly firm so they hold up in the stir-fry.
