Description

A light and versatile low-carb bread substitute that’s perfect for sandwiches or as a side for soups and salads.


Ingredients

  • 0.5 cup Cottage Cheese (preferably full-fat)
  • 3 large Eggs (separated)
  • 0.25 teaspoon Cream of Tartar
  • 0.25 teaspoon Salt
  • Optional: Garlic powder, herbs, or a pinch of sugar for sweetness

Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. In a clean bowl, beat the egg whites with cream of tartar until stiff peaks form.
  3. In another bowl, combine cottage cheese, egg yolks, and salt. Mix well until smooth, adding optional ingredients if desired.
  4. Gently fold the egg white mixture into the cottage cheese mixture.
  5. Spoon the mixture onto the prepared baking sheet in small mounds and shape as desired. Bake for about 25-30 minutes, or until golden brown.
  6. Let the cloud bread cool on a wire rack for a few minutes before serving.

Notes

Make sure your mixing bowls and beaters are clean and dry for better egg white volume. You can substitute cottage cheese with a dairy-free alternative, but the texture may change.
