Description
A light and versatile low-carb bread substitute that’s perfect for sandwiches or as a side for soups and salads.
Ingredients
Scale
- 0.5 cup Cottage Cheese (preferably full-fat)
- 3 large Eggs (separated)
- 0.25 teaspoon Cream of Tartar
- 0.25 teaspoon Salt
- Optional: Garlic powder, herbs, or a pinch of sugar for sweetness
Instructions
- Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
- In a clean bowl, beat the egg whites with cream of tartar until stiff peaks form.
- In another bowl, combine cottage cheese, egg yolks, and salt. Mix well until smooth, adding optional ingredients if desired.
- Gently fold the egg white mixture into the cottage cheese mixture.
- Spoon the mixture onto the prepared baking sheet in small mounds and shape as desired. Bake for about 25-30 minutes, or until golden brown.
- Let the cloud bread cool on a wire rack for a few minutes before serving.
Notes
Make sure your mixing bowls and beaters are clean and dry for better egg white volume. You can substitute cottage cheese with a dairy-free alternative, but the texture may change.
