Description

Delightful pancakes combining the crispy essence of churros with the fluffiness of pancakes, perfect for busy mornings or lazy weekends.


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup cinnamon sugar (for topping)

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, mix the milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Heat a non-stick skillet over medium heat and lightly grease it.
  5. Pour 1/4 cup of batter onto the skillet for each pancake.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown.
  7. Remove from skillet and immediately sprinkle with cinnamon sugar.
  8. Repeat with remaining batter.
  9. Serve warm and enjoy!

Notes

These pancakes can be made ahead and stored in the fridge or freezer. Serve with fresh fruit, Greek yogurt, or maple syrup.
