Description

Delicious and healthy Spinach Garlic Meatballs packed with protein and flavor, perfect for busy weeknights or meal prep.


Ingredients

  • 1 lb Ground Beef or Turkey
  • 2 cups Fresh Spinach (sautéed)
  • 4 cloves Garlic (minced)
  • 1 small Onion (optional, finely chopped)
  • 1 large Egg
  • 1 cup Breadcrumbs
  • 1/2 cup Grated Parmesan Cheese
  • 8 oz Low-Moisture Mozzarella Cubes
  • 1 tbsp Italian Seasoning
  • Salt (to taste)
  • Pepper (to taste)
  • 1/2 tsp Red Pepper Flakes
  • 1 tbsp Chopped Parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Sauté the fresh spinach in a pan over medium heat for 2-3 minutes until wilted. Remove from heat and cool.
  3. In a large bowl, combine ground beef or turkey, sautéed spinach, minced garlic, chopped onion, egg, breadcrumbs, grated Parmesan, Italian seasoning, salt, pepper, and red pepper flakes.
  4. Form the mixture into balls, placing a cube of mozzarella in the center of each, sealing with more meat mixture.
  5. Place meatballs on a parchment-lined baking sheet.
  6. Bake for 20-25 minutes or until internal temperature reaches 160°F (71°C).
  7. Let cool slightly before serving.

Notes

Squeeze excess moisture from the sautéed spinach to avoid soggy meatballs. Use chilled mozzarella to prevent melting during cooking.
