- 1 lb Ground Beef or Turkey
- 2 cups Fresh Spinach (sautéed)
- 4 cloves Garlic (minced)
- 1 small Onion (optional, finely chopped)
- 1 large Egg
- 1 cup Breadcrumbs
- 1/2 cup Grated Parmesan Cheese
- 8 oz Low-Moisture Mozzarella Cubes
- 1 tbsp Italian Seasoning
- Salt (to taste)
- Pepper (to taste)
- 1/2 tsp Red Pepper Flakes
- 1 tbsp Chopped Parsley (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Sauté the fresh spinach in a pan over medium heat for 2-3 minutes until wilted. Remove from heat and cool.
- In a large bowl, combine ground beef or turkey, sautéed spinach, minced garlic, chopped onion, egg, breadcrumbs, grated Parmesan, Italian seasoning, salt, pepper, and red pepper flakes.
- Form the mixture into balls, placing a cube of mozzarella in the center of each, sealing with more meat mixture.
- Place meatballs on a parchment-lined baking sheet.
- Bake for 20-25 minutes or until internal temperature reaches 160°F (71°C).
- Let cool slightly before serving.
Notes
Squeeze excess moisture from the sautéed spinach to avoid soggy meatballs. Use chilled mozzarella to prevent melting during cooking.
