- 1 cup all-purpose flour
- 2 large eggs
- 1 cup milk
- 1/4 cup sugar
- 1/2 teaspoon vanilla extract
- 1 cup ricotta cheese
- 1/4 cup cream cheese, softened
- 1/4 cup powdered sugar
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 2 tablespoons lemon juice
- Butter for frying
Instructions
- In a bowl, mix flour, eggs, milk, sugar, and vanilla to create a smooth batter.
- Heat a non-stick pan with butter over medium heat and pour a small amount of the batter to form thin crepes. Cook until golden on both sides.
- In another bowl, combine ricotta, cream cheese, and powdered sugar.
- Place a spoonful of the cheese mixture in the center of each crepe and fold it over.
- For the berry sauce, combine mixed berries and lemon juice in a saucepan over medium heat until softened.
- Serve the blintzes warm, topped with the berry sauce.
Notes
Rest the batter before cooking for tender crepes. Experiment with different fruits or sweeteners in the berry sauce.
