Description

A delightful treat featuring a soft cheese filling wrapped in thin crepes, served with a fresh berry sauce.


Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup milk
  • 1/4 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup ricotta cheese
  • 1/4 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 2 tablespoons lemon juice
  • Butter for frying

Instructions

  1. In a bowl, mix flour, eggs, milk, sugar, and vanilla to create a smooth batter.
  2. Heat a non-stick pan with butter over medium heat and pour a small amount of the batter to form thin crepes. Cook until golden on both sides.
  3. In another bowl, combine ricotta, cream cheese, and powdered sugar.
  4. Place a spoonful of the cheese mixture in the center of each crepe and fold it over.
  5. For the berry sauce, combine mixed berries and lemon juice in a saucepan over medium heat until softened.
  6. Serve the blintzes warm, topped with the berry sauce.

Notes

Rest the batter before cooking for tender crepes. Experiment with different fruits or sweeteners in the berry sauce.
