- 1 lb chicken breast, diced
- 1 cup pineapple chunks
- 1/2 cup peanut sauce
- 1 tablespoon soy sauce
- 1 tablespoon vegetable oil
- 1/2 cup diced bell peppers
- 1/4 cup chopped green onions
- Salt and pepper to taste
Instructions
- In a large skillet, heat the vegetable oil over medium heat. Add the diced chicken and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
- Stir in the diced bell peppers and cook for another 3-4 minutes until they are tender.
- Add the pineapple chunks, peanut sauce, and soy sauce to the skillet. Stir to combine and cook for an additional 2-3 minutes, allowing the flavors to meld.
- Serve the pineapple chicken over cooked rice. Garnish with chopped green onions before serving.
Notes
For an extra depth of flavor, add garlic or ginger when cooking the chicken. This dish can be made ahead and frozen for later use.
