Description

A comforting and healthy Tuscan White Bean Soup packed with flavor and nutrients, perfect for lunch or dinner.


Ingredients

Scale
  • 1 can of white beans (cannellini or great northern)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Olive oil
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion and garlic, and sauté until softened.
  3. Stir in carrots and celery, cooking for another 5 minutes.
  4. Add white beans, diced tomatoes, vegetable broth, thyme, rosemary, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20-25 minutes.
  6. Use a fork to mash some beans for creaminess if desired.
  7. Serve hot with rustic bread and garnish with fresh parsley.

Notes

For extra flavor, add a splash of lemon juice before serving. Can substitute white beans with chickpeas or add sausage for a meatier version.
