Description
A comforting and healthy Tuscan White Bean Soup packed with flavor and nutrients, perfect for lunch or dinner.
Ingredients

- 1 can of white beans (cannellini or great northern)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Olive oil
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onion and garlic, and sauté until softened.
- Stir in carrots and celery, cooking for another 5 minutes.
- Add white beans, diced tomatoes, vegetable broth, thyme, rosemary, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes.
- Use a fork to mash some beans for creaminess if desired.
- Serve hot with rustic bread and garnish with fresh parsley.
Notes
For extra flavor, add a splash of lemon juice before serving. Can substitute white beans with chickpeas or add sausage for a meatier version.
