Description

This cranberry orange glazed turkey offers a juicy and flavorful main course with a sweet and tangy sauce, making it a delicious alternative to a traditional roast.


Ingredients

  • One 45 lb turkey breast
  • 2 tablespoons brown sugar
  • 4 cloves garlic, minced
  • 2 tablespoons canola oil
  • 1 tablespoon dark molasses
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • Salt and ground black pepper to taste
  • Sprigs of fresh rosemary and/or thyme
  • 2 cups fresh or frozen cranberries
  • 1 can (14 ounces) whole berry cranberry sauce
  • 1/2 cup Lingonberry jam (or orange marmalade)
  • 1 cup orange juice
  • Zest of 1 medium orange
  • 2 tablespoons cornstarch
  • 2 tablespoons granulated sugar

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a small bowl, mix brown sugar, minced garlic, canola oil, molasses, cinnamon, nutmeg, salt, and pepper to create the rub.
  3. Pat turkey breast dry and apply the rub all over it.
  4. In a saucepan, combine cranberries, cranberry sauce, Lingonberry jam, orange zest, and sugar.
  5. In a separate cup, whisk orange juice and cornstarch until dissolved, then stir into the saucepan.
  6. Bring glaze to a simmer over medium heat for 10-15 minutes until cranberries burst and sauce thickens.
  7. Place seasoned turkey breast in a roasting pan and pour most of the glaze around it, reserving some for brushing later. Add a small amount on top to prevent burning.
  8. Tuck fresh herb sprigs around the turkey.
  9. Roast for about 90 minutes. During the last 30 minutes, brush with remaining glaze every 10-15 minutes.
  10. Turkey is done when internal temperature reaches 160-165°F (71-74°C).
  11. Remove from oven, cover with foil, and let rest for 15 minutes before slicing.

Notes

Use a meat thermometer to ensure perfect doneness. Avoid applying too much glaze early to prevent burning. Let the turkey rest before slicing for best results.
