Description

A warm, creamy soup filled with wholesome ingredients, perfect for chilly nights.


Ingredients

Scale
  • 4 cups Vegetable Broth (Low-sodium recommended)
  • 1 lb Rotisserie Chicken (Shredded)
  • 8 oz Fresh Mushrooms (Button or Cremini)
  • 1 medium Onion (Chopped)
  • 3 cloves Garlic (Minced)
  • 1 cup Heavy Cream (Can be substituted with half-and-half or plant-based cream)
  • 1 tsp Thyme (Fresh preferred)
  • to taste Salt
  • to taste Pepper
  • 2 tbsp Olive Oil (Can be replaced with butter)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic. Sautรฉ until the onion becomes translucent.
  3. Stir in the fresh mushrooms and cook until they release their juices and are tender.
  4. Add the shredded rotisserie chicken to the pot.
  5. Pour in the vegetable broth and bring the mixture to a simmer.
  6. Reduce the heat and add the heavy cream. Stir well.
  7. Add thyme, salt, and pepper to taste. Let it cook for a few more minutes until everything is heated through.
  8. Taste and adjust the seasoning if necessary. Garnish with more fresh thyme before serving.

Notes

Can be stored in the refrigerator for up to 3 days or frozen for up to 3 months. For a thicker soup, blend a portion and mix it back in.
