- 4 cups Vegetable Broth (Low-sodium recommended)
- 1 lb Rotisserie Chicken (Shredded)
- 8 oz Fresh Mushrooms (Button or Cremini)
- 1 medium Onion (Chopped)
- 3 cloves Garlic (Minced)
- 1 cup Heavy Cream (Can be substituted with half-and-half or plant-based cream)
- 1 tsp Thyme (Fresh preferred)
- to taste Salt
- to taste Pepper
- 2 tbsp Olive Oil (Can be replaced with butter)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic. Sautรฉ until the onion becomes translucent.
- Stir in the fresh mushrooms and cook until they release their juices and are tender.
- Add the shredded rotisserie chicken to the pot.
- Pour in the vegetable broth and bring the mixture to a simmer.
- Reduce the heat and add the heavy cream. Stir well.
- Add thyme, salt, and pepper to taste. Let it cook for a few more minutes until everything is heated through.
- Taste and adjust the seasoning if necessary. Garnish with more fresh thyme before serving.
Notes
Can be stored in the refrigerator for up to 3 days or frozen for up to 3 months. For a thicker soup, blend a portion and mix it back in.
