Description

A soft, fluffy keto-friendly bread made with Greek yogurt, perfect for toast, sandwiches, or dipping in soup.


Ingredients

  • 6 large eggs
  • ½ cup full-fat Greek yogurt (unsweetened, plain)
  • 1 tablespoon baking powder (aluminum-free preferred)
  • ¼ cup melted butter or coconut oil
  • ¼ teaspoon salt
  • ½ teaspoon xanthan gum or psyllium husk powder
  • Optional: ½ cup finely ground almond flour

Instructions

  1. Preheat and Prep: Preheat oven to 350°F (175°C). Line or grease a loaf pan.
  2. Mix Wet Ingredients: Whisk eggs, yogurt, and melted butter until smooth.
  3. Add Dry Ingredients: Stir in baking powder, salt, and xanthan gum or psyllium husk. Add almond flour if using.
  4. Pour and Smooth: Pour batter into the pan, smooth top, and tap to release bubbles.
  5. Bake: Bake 35–45 minutes until golden and a toothpick comes out clean.
  6. Cool Completely: Let cool 10 minutes in pan, then transfer to a wire rack to cool fully before slicing.
