- ½ cup full-fat Greek yogurt (unsweetened, plain)
- 1 tablespoon baking powder (aluminum-free preferred)
- ¼ cup melted butter or coconut oil
- ¼ teaspoon salt
- ½ teaspoon xanthan gum or psyllium husk powder
- Optional: ½ cup finely ground almond flour
Instructions
- Preheat and Prep: Preheat oven to 350°F (175°C). Line or grease a loaf pan.
- Mix Wet Ingredients: Whisk eggs, yogurt, and melted butter until smooth.
- Add Dry Ingredients: Stir in baking powder, salt, and xanthan gum or psyllium husk. Add almond flour if using.
- Pour and Smooth: Pour batter into the pan, smooth top, and tap to release bubbles.
- Bake: Bake 35–45 minutes until golden and a toothpick comes out clean.
- Cool Completely: Let cool 10 minutes in pan, then transfer to a wire rack to cool fully before slicing.
Notes
Let the loaf cool fully before slicing to avoid crumbling. Great for meal prep and freezes well. Toast for best texture.
