Ingredients

  • 1 ½ pounds sweet potatoes, peeled and diced into ½-inch cubes
  • 1 tablespoon avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon ground cinnamon
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 ½ pounds lean ground beef
  • 1 tablespoon avocado oil
  • 3 cloves garlic, minced
  • ½ medium yellow onion, finely diced
  • 2 tablespoons taco seasoning
  • ½ teaspoon cumin
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • â…“ cup honey
  • 1 tablespoon hot sauce
  • 1 teaspoon red pepper flakes
  • 1 tablespoon unsalted butter
  • 2 cups low-fat cottage cheese
  • 1 ripe avocado, sliced
  • 2 tablespoons chopped fresh cilantro
  • Lime wedges, for serving

Instructions

  1. Preheat your oven to 425°F and line a large baking sheet with parchment paper.
  2. Toss the diced sweet potatoes in a large bowl with avocado oil, garlic powder, onion powder, smoked paprika, cinnamon, salt, and black pepper until evenly coated. Spread in a single layer on the prepared baking sheet and roast for 25–30 minutes, flipping halfway through, until golden and fork-tender.
  3. While the sweet potatoes roast, heat 1 tablespoon of avocado oil in a large skillet over medium-high heat. Add the minced garlic and diced onion; cook for 2–3 minutes until softened and fragrant.
  4. Add the ground beef to the skillet, breaking it apart, and season with taco seasoning, cumin, salt, and black pepper. Cook for 8–10 minutes, stirring occasionally, until browned and cooked to 165°F.
  5. Prepare the hot honey drizzle by melting the butter in a small saucepan over medium-low heat. Whisk in the honey, hot sauce, and red pepper flakes; simmer for 3–4 minutes until thickened, then remove from heat.
  6. Assemble each bowl by layering the roasted sweet potatoes and seasoned ground beef. Top with a scoop of cottage cheese, sliced avocado, and fresh cilantro. Drizzle with hot honey and serve immediately with lime wedges on the side.

Notes
