Description

Delicious and colorful Bang Bang Chicken Bowl with tender chicken, fresh veggies, and a spicy mayo drizzle.


Ingredients

  • 1 lb chicken breast, diced
  • 2 cups jasmine rice
  • 1 cup mixed fresh veggies (like bell peppers, carrots, and cucumber)
  • 1/4 cup mayonnaise
  • 2 tablespoons sriracha sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional toppings: green onions, sesame seeds

Instructions

  1. Cook the jasmine rice according to package instructions.
  2. In a pan, heat olive oil over medium heat.
  3. Season the diced chicken with salt and pepper, and cook until golden brown and cooked through, about 5-7 minutes.
  4. In a small bowl, mix mayonnaise and sriracha to create the spicy mayo drizzle.
  5. Once the chicken is cooked, assemble the bowls by adding a layer of rice, followed by the chicken, fresh veggies, and drizzle of spicy mayo on top.
  6. Garnish with green onions and sesame seeds if desired. Serve immediately.

Notes

For extra flavor, marinate the chicken in sriracha and olive oil before cooking. You can also use leftover or rotisserie chicken to save time.
