Description

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • Salt and pepper, to taste
  • 1 tablespoon lemon juice
  • 1 pound potatoes, peeled and chopped
  • 1/4 cup milk
  • 2 tablespoons sour cream
  • Chopped parsley, for garnish

Instructions

  1. In a large pot, boil the chopped potatoes until tender. Drain and mash with milk and sour cream, then set aside.
  2. In a skillet, melt butter over medium heat and add minced garlic, cooking until fragrant.
  3. Add the shrimp to the skillet and cook until pink, about 2-3 minutes per side.
  4. Pour in the heavy cream and chicken broth, bring to a simmer, and season with salt, pepper, and lemon juice.
  5. Cook until the sauce thickens slightly.
  6. Serve the creamy garlic shrimp over the mashed potatoes and garnish with chopped parsley.

Notes

Don’t overcook the shrimp; they cook quickly and become tough if left too long in the heat. For a healthier option, consider replacing heavy cream with coconut milk.
