- 1 pound shrimp, peeled and deveined
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- Salt and pepper, to taste
- 1 tablespoon lemon juice
- 1 pound potatoes, peeled and chopped
- 1/4 cup milk
- 2 tablespoons sour cream
- Chopped parsley, for garnish
Instructions
- In a large pot, boil the chopped potatoes until tender. Drain and mash with milk and sour cream, then set aside.
- In a skillet, melt butter over medium heat and add minced garlic, cooking until fragrant.
- Add the shrimp to the skillet and cook until pink, about 2-3 minutes per side.
- Pour in the heavy cream and chicken broth, bring to a simmer, and season with salt, pepper, and lemon juice.
- Cook until the sauce thickens slightly.
- Serve the creamy garlic shrimp over the mashed potatoes and garnish with chopped parsley.
Notes
Don’t overcook the shrimp; they cook quickly and become tough if left too long in the heat. For a healthier option, consider replacing heavy cream with coconut milk.
