Made with tender potatoes, creamy milk, and a touch of butter, this simple soup brings back memories of cozy family dinners. It’s budget-friendly, satisfying, and ready in about 30 minutes!
Ingredients
- 5 pounds potatoes, scrubbed, peeled, and chopped into 1-inch pieces
- Water (enough to cover the potatoes)
- 6 cups whole milk
- 1½ teaspoons kosher salt (adjust to taste)
- ½ teaspoon freshly ground black pepper (adjust to taste)
- 2 tablespoons butter (optional)
Instructions
- Place the chopped potatoes in a large pot and cover with water. Bring to a boil, then simmer for about 15 minutes until fork-tender.
- Drain the water and return the pot to the stove.
- Add the milk and heat over medium until steaming, about 10 minutes don’t let it boil.
- Season with salt and pepper, then stir in butter until melted and creamy.
- Remove from heat, taste, and adjust seasoning. Serve warm with fresh herbs, shredded cheese, or bacon bits if desired.
Notes
• For extra creaminess, mash some of the potatoes before serving.
• Add chopped celery or onions while boiling for extra flavor.
• Leftovers reheat beautifully it tastes even better the next day!
